Banana Cream Cheesecake

I discovered this recipe online and it quickly became one of my favorites. It combines two things I love: bananas and creamcheese!

Oreos 1 package
Unsalted butter ~2 tbsp
Low-Fat/Fat-Free Cream Cheese 3 × 8oz packages
White Sugar 3/4 cups
Eggs 3
Bananas 2 - 3
Vanilla Extract 1 tsp
Topping  
Cold Milk 1 1/4 cups
Instant Pudding Mix (Vanilla or Banana) 1 × 3.4oz package
Fat-Free Frozen Whipped Topping, Thawed ~1/2 cup
Bananas 1 - 2

Recipe

Cake

  1. Prepare equipment:
    • Pre-heat the oven to 350°F (175°C).
    • Cut a circle of parchment paper to line the bottom of your springform pan.
    • Optionally cut a strip of parchment paper to run along the sides of the pan to make separation easier.
  2. Prepare ingredients:
    • Mash Oreos in a ziplock bag or similar until you have 2 - 2.5 cups.
    • Mash 1 - 2 bananas until you have 1/2 - 1 cups.
    • Soften ~2 tbsp of butter so it can bind the mashed Oreos into a crust.
  3. Make crust:
    • Mix cookie crumbs (~2 cups) and melted butter (~2 tbsp) together in a bowl.
    • Press mixture into the bottom of a 9-inch springform pan (ensure parchment is lining the bottom).
  4. Make cake mix:
    • Mix cream cheese (3 × 8oz package) and sugar (3/4 cup) in a bowl using electric mixer until smooth and well-blended.
    • Add eggs one at a time, mixing after each addition.
    • Stir in mashed banana (~1/2 cup) and vanilla extract (1 tsp).
    • Pour mixture on top of the crust in the springform pan.
  5. Bake in the preheated oven until center is almost set, 50-60 minutes.
    • The middle will be just a tad jiggly.
    • Cool completely, at least 1 hour, before removing from pan.

Topping

  1. Whisk milk (1 1/4 cups) and pudding mix (1 × 3/4oz package) together in a bowl until thoroughly combined.
  2. Fold in whipped topping (1/2 cup).
  3. Slice bananas and arrange on top of cooled cheesecake.
  4. Spread pudding mixture on top.
  5. Chill at least 3 hours before serving.
